Whoa, a Salad?
For some reason, a lot of people I know don’t really appreciate salads, which makes me a little sad- I’m a huge fan of salads! It’s a simple but tasty meal made out of shredded leaves, chopped vegetables with dollops of creaming dressing, crunchy croutons and a hint of parmesan cheese sprinkled on top… does anybody else agree with me?
But the fact is, store-brought salad dressings are full of unhealthy preservatives, which a lot of people dislike. Luckily, I recently obtained a recipe for a healthy homemade salad dressing that uses only three natural ingredients (which cuts out a lot of bad stuff) and introduced me to the vegetable that is Kale. Stay tuned for some healthy facts about this green good after the recipe!
Now everybody can have fun eating salads!
Approximately 8 cups of Kale
1/4 cup of virgin olive oil
2 teaspoons of honey
+ a jar to mix the salad dressing in
How to Do the Do:
Wash up the kale. Make sure you do it thoroughly— a sprinkle of baking soda in the water can do the trick!
Rip the kale up into bite-sized pieces.
Cut off about 1/3 of the lemon. You can cut up a larger portion of you want more lemon juice in the salad dressing.
Squeeze the juice into the jar.
Pour 1/4 cup of virgin olive oil into the lemon juice.
Add 2 teaspoons of honey.
Shake very well!
Arrange the kale onto a dish and pour the salad dressing on top.
I added some cherry tomatoes too!
I did a little reattach on the health benefits of kale to see what they’re all about, and here are some fun facts:
- Full of vitamins A, C, and K
- Rich with iron and calcium
- High in water and fibre content
- Helps improve bones, body tissues, skin and hair
